Food For Thought: Roasted Chicken & Bread Stuffing with green bean casserole & whole cranberry sauce…

Our after Thanksgiving dinner. Whole chicken rubbed down with light butter, seasoned with Coriander & Lemon Pepper Adobo. With Italian 567 Bread dried out and seasoned with fresh parsley, onions browned in light butter, pepper, onion powder, garlic powder & celery salt and bound with bullion Chicken Broth.

The Meatloaf & Mash were homemade the beans were frozen.

Food For Thought: Chicken with Assorted Veggies over Jasmine Rice…

Tried something new, seasoned my tenderized chicken breasts with Lemon Pepper Adobo, Smoked Paprika & Coriander cooked in Coconut Oil in a Cast Iron Skillet in the oven for 30 minutes at 400 degrees. Then added on top of a bed of Jasmine Rice and Assorted Veggies to finish it out.

Spaghetti Squash Boats: Cut a small spaghetti squash in half & remove the seeds. Preheat oven to 475 & spray a baking sheet. Drizzle Olive Oil and dried oregano & garlic powder on cut halves. Food For Thought: Eggplant Crab Rollatini…

  Made as an alternative to lasagna..It’s Ricotta/Crab/Roasted Garlic Powder & Spinach rolled in cut length wise eggplant slices (That were pre-baked for 10 minutes to become pliable) Topped with our favorite pasta sauce, some fresh mozzarella & a sprinkling of Parmesan.
