Food For Thought: The Matt Burger…

  • Cleaned & Diced portabello mushroom, diced vidalia onion sauteed in balsamic.
  • Bison burger cooked with sliced thin cheddar
  • Put burger on whole wheat bun with Ketchup, mushrooms & onions and top with arugula
  • Serve with a side of steamed butternut squash spirals. Enjoy 🙂


Food For Thought: Beans on Toast

The English eat odd things at times, but I’m sure they think the same of Americans LOL. I’ve heard about Beans on Toast on various shows on BBC Radio and through Fellow Blogger Jo posting such. I just had to give it a try. Granted I used a lower sodium/lower sugar version of beans on wheat toast with some light butter and a side of strawberries & fresh Cauliflower with a 64 Ounce Bottle of water.


Food For Thought: Sauteed Chicken with Lemon-Caper Sauce…

Tried something new. I don’t usually follow recipes but my wife rejoined WW and this was one of theirs. Pretty damn good. Chicken Thighs lightly coated with black pepper seasoned flour, cooked in an olive oil coated cast iron skillet with lemon juice, capers, low sodium chicken broth and topped with parsley. We also had a butter lettuce & cherry tomato salad.

Our after Thanksgiving dinner. Whole chicken rubbed down with light butter, seasoned with Coriander & Lemon Pepper Adobo. With Italian 567 Bread dried out and seasoned with fresh parsley, onions browned in light butter, pepper, onion powder, garlic powder & celery salt and bound with bullion Chicken Broth.

Nothing and I mean Nothing beats home made/made from scratch meals 🙂


Weight Watchers Friendly because I smashed & seasoned the red beans myself as opposed to buying refried beans & used a lite tortilla and reduced fat cheese.

Food for Thought: Chicken Meatball Sandwich (Last of the splurge meals before our eating style goes full on healthy)…


My chicken meatloaf recipe made into balls with a tablespoon of mixed berry jam than baked in the oven with canned mushroom bits & stems and a diced sweet onion topped with a can of Italian Style Tomato Sauce and put in a fluffy steak roll, with sweet potato tots & green bean casserole.

It happened on the 31st

Blue stumbled around a bit because the mask he was wearing was hard to see through. He decided to take a shortcut through the cemetery to meet his friend Jerry. Of all the things to be this year, he hadn’t thought being a horse would cause him so much grief. The sun had just set, cast a eerie glow over the street as dusk settled. It was a short walk to where he was going, but in this costume, it felt like miles.
He turned, but couldn’t see more than a few feet in front of him. Odd. His breath quicken. Only a few more minutes and he’d be fine. Shaking his head, he ignored the chill that seemed to be permanently embedded in his spine. Why hadn’t he left a bit earlier?
The wind rustled beneath him, reminding him that his costume was catching leaves. He found himself stumbling and tumbling over a rock. He chuckled, that was the sound he was hearing. Happy Halloween indeed.
His eyes rose, just ahead was the hill where his Halloween adventure would begin.
It was also where he say a dark silhouette, waving at him. With no head.

Fear shot through him, how the hell did the headless figure know his name.
But it was all he needed to turn and run back in the other direction. Adrenaline kicked in and blue stumbled kicking up the leaves and stripping himself of the hindrance of the horse head mask as he scampered away.
The headless figure stopped waving, and though he was confused, The figure reached up, removing the bulk that was resting upon his shoulders and stated “But Blue, we said we were doing a themed costume this year !!” The dark of the night had made Blue forget that he and Jerry had planned to be the Headless Horseman and his horse.
