Growing up Good Friday was always a seafood feast at my house. My dad relished in cooking grilled scallops, fried shrimp and Clam Strips, baked breaded oysters (that were so damn good I regret never getting the recipe) and the occasional lobster tail.
So, to not follow in that tradition at all I made onion seasoned chicken thighs with homemade potato salad and corn on the cob. Probably more Memorial Day than Good Friday but it is what it is.

That looks like a pretty Good Friday to me.

I much prefer your meal to your dad’s, to be honest. I am not a fan of oysters which is outrageous for a PacNorthwesterner to admit. 🙂
